Listeria monocytogenes Challenge Testing of Refrigerated Ready-to-Eat Foods

The purpose of this document is to recommend an experimental design for challenge test studies to determine the potential for growth of Listeria monocytogenes in refrigerated ready-to-eat (RTE) foods, more specifically, to determine if a RTE food can or cannot support the growth of L. monocytogenes.
